Lone Star Beef Processors, located in San Angelo, Texas, “The Heart of Beef Country” was started by John Cross and Burley Smith in 1997. In the beginning, we slaughtered about 600 head daily and with additions and renovations completed in 2007, we can slaughter over 1000 head each day. A new state of the art freezer was also opened in 2007, which includes blast-freezing capabilities. We are currently adding on and making other improvements.
We have an extensive HACCP program that began in 1993, which includes two pathogen prevention programs 1) hot water pasteurization bath and 2) organic acid spray wash. In 2008, state of the art x-ray and fat detection equipment was introduced. Our Quality Control Department includes a QC Manager, HACCP Coordinator, Lab Manager, Lab Technician, QC Tech Supervisor, and 13 QC Technicians. Extensive microbial testing is done daily on finished product, equipment, and the environment.
Our extensive management team has more than 164 years of experience in the meat and livestock industry, and our managers and supervisors each average over 18½ years of experience.
